HOW TO MAKE VANILLA PEACH MUFFINS.
Makes 12 muffins

2 ½ tbsp. coconut flour
1 tsp. ground cinnamon
½ tsp. baking soda
¼ tsp. salt

1 medium peach, chopped
INSTRUCTIONS.

- Mix the dry ingredients – In a large bowl, combine the ground almonds, coconut flour, cinnamon, baking soda, and salt.
- Blend the wet ingredients – In another bowl, whisk together the beaten eggs, honey, melted coconut oil, and vanilla extract until smooth.
- Combine – Gently fold the wet mixture into the dry ingredients using a spatula until everything is well incorporated. Be careful not to overmix!
