SERVES 4 PREP 10 MINS COOK 20 Mins

1 tbsp. olive oil

1 onion, diced

2 cloves garlic, minced

1 tbsp. fresh ginger, grated

2 tbsp. Thai red curry paste

1 can (400ml) coconut milk

1 cup (240ml) vegetable or fish stock

450g cod fillets, cut into chunks

3 cups (90g) spinach or other leafy greens

Juice of 1 lime

Salt and pepper, to taste

Fresh coriander, chopped, for garnish

Cooked rice or quinoa, for serving

ALL YOU DO

  1. Prepare the Base: Heat the olive oil in a large pan over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes. Add the minced garlic and grated ginger, cooking for another minute until fragrant.
  2. Add the Curry Paste: Stir in the Thai red curry paste and cook for 2 minutes, allowing the flavours to meld.
  3. Create the Sauce: Pour in the coconut milk and stock, stirring well to combine. Bring the mixture to a gentle simmer.
  4. Cook the Fish: Add the cod chunks to the pan. Simmer gently for about 5-7 minutes, until the fish is cooked through and flakes easily with a fork.
  5. Incorporate the Greens: Stir in the spinach or other leafy greens and cook until wilted, about 2 minutes.
  6. Finish with Lime: Remove the pan from the heat and stir in the lime juice. Season with salt and pepper to taste.
  7. Serve: Serve the coconut fish curry over cooked rice or quinoa, garnished with fresh coriander.

While cod is the star of this dish, you can easily swap it out for other proteins to suit your taste or dietary needs:

  • Salmon: Provides a rich source of omega-3 fatty acids and a slightly stronger flavour.
  • Prawns: They cook quickly and add a nice texture contrast.
  • Chicken: Use boneless, skinless chicken breasts or thighs, cut into chunks, for a lean protein option.
  • Tofu: For a vegetarian version, use firm tofu, cut into cubes, which absorbs the flavours beautifully.

Coconut Fish Curry is more than just a meal; it’s an experience that brings warmth, flavour, and health benefits to your table. Whether you’re looking for a quick weeknight dinner, a meal prep option, or something to impress your family and friends, this dish has got you covered.
